Chocolate Peppermint Marshmallows
A perfect winter treat or hot chocolate addition.
As some of you may know, I’m a bit obsessed with making marshmallows. They’re simple, delicious, free of refined sugar, and completely customizable in terms of flavor; the variations are endless! However, this might be my favorte variation I’ve made so far and perfect for the holiday season. Hope you enjoy!
S’mores Brownies Recipe
Ingredients
1 cup water, divided
½ cup honey
½ cup maple syrup
3 tbsp gelatin
1 splash vanilla extract
Starch or powdered sugar (for dusting)
1/4 cup cocoa powder
1 tsp black cocoa (optional, just gives the marshmallows a deeper brown color)
3 regular or 6 mini rushed up candy canes
Instructions
Gather all your ingredients and line a 9x9 pan with parchment and dust it with starch or powdered sugar (if you want the outside of the marshmallows to be brown on the outside, then mix the starch/powdered sugar with a little cocoa powder).
In a stand mixer bowl, sprinkle gelatin over ½ cup water. Let sit to bloom.
In a saucepan, combine remaining ½ cup water, honey, and maple syrup. Heat over medium-high until mixture reaches 240°F (use a candy or digital thermometer). Do not stir once honey dissolves.
Begin mixing the gelatin on low speed. Slowly stream the hot syrup into the bowl while mixing.
Increase speed to high (but not the highest speed) and whip until the mixture turns white and fluffy. Add vanilla and cocoa powder then whip briefly to combine.
Transfer the marshmallow mixture to the prepared pan and spread evenly. Sprinkle most of the crushed candy canes on top. Dust the top with starch, then sprinkle a few more candy cane pieces on top. Let it set for several hours, and enjoy!
